Healthy salad with quinoa and fruit topped off with an Asian dressing
Source: Inspired by a Gluten-free Goddess recipe
Fluff the quinoa and drizzle with olive oil.
Remove the ribs from the kale.
Massage the kale with EVOO and sea salt to taste.
Slice kale into ribbons.
Add the orange segments, keeping the remaining juice.
To make the dressing, whisk together soy sauce, honey, garlic, pepper, ginger and 3 tbsp. of the remaining mandarin orange juice.
Toss the toasted almonds over the salad.
