Recipe from Original Maui Tacos
After scrubbing and dicing the potatoes, put the cubes in a bowl of ice water.
Bring the 2 cups of water, salt, garlic, and bay leaf to a boil
Drain off the ice water from the potatoes and carefully add them to the boiling water.
Cook potato cubes until just fork tender. Drain.
Place cooked potatoes in a bowl. While still warm, add fresh chopped cilantro and onion.
Salt & pepper to taste. Mix gently.
Fills two burritos.
