Healthy Meat Loaf Muffins
1 Heat the oven to 375 ° F. Lightly oil or coat 12 muffin cups with nonstick cooking spray and set aside.
2 Whisk together the eggs, tomato sauce (save 3 tablespoons to use for the topping), Italian seasoning, salt, pepper, onion powder, and garlic powder in a large bowl until well blended. Stir in the oats, carrot, and Parmesan cheese.
3 Using your clean hands, mix the ground meat into the oat mixture until just combined. Divide the meat mixture evenly among the muffin cups and spread the reserved tomato sauce evenly on top of each one.
4 Bake until an instant-read meat thermometer registers 160 ° F, 25 to 30 minutes.
