Basic Meatloaf with variations based on what is available
Meatloaf recipe
2lbs ground beef 90% lean is best
1 package French onion soup
1 can tomato soup
2 eggs
1/2 cup water
Any chopped veggies I want but chop them super tiny and purée is even better (peppers are yum) if we have finicky kids we are trying to encourage to taste
1 1/2 cup of mostly soft bread crumbs, but any combination of bread, crackers, chip crumbles is fine.
Mix everything together and bake one hour at 350 degrees
Tips:
spray sides and bottom of baking pan - small square one works great It's easier to mix the beef with the wet ingredients first and add the bread crumbs last Some people prefer to use 1/3 cup ketchup instead of tomato soup.
