Try this Mexican cheesy beans on toast with a duck egg recipe, or contribute your own.
Suggest a better descriptionSpray a saucepan with low cal cooking spray. Briefly fry the spices until the aroma is released (take care not to burn) and add the beans and mix. Fry until the beans are starting to blister (about 2 mins) and add the passata, garlic powder, rosemary and lightly season with salt and pepper. Simmer for 5 mins and check and adjust the seasoning. Meanwhile, fry the duck egg in a frying pan with low cal spray until the white is opaque and the yolk is just set (use a lid and steam with a splash of water for best results and don’t forget to lightly season the yolk once almost cooked). Toast the bread. Place the toast on the plate, top with the bean mixture, top with the egg and then the cheese. Grill briefly until the cheese is just melting.
