This Pie was Adapted from an English Style to my own "Mexican Style"
Pumpkin pureé:
En una olla colocar la calabaza cortada en pedazos, agregar agua a que la cubra, agregar el piloncillo y la canela. Hervir a fuego medio hasta q este suave.
Dejar enfriar y sacar la pulpa de cada pedazo y vaciar en un recipiente hondo. Quitar semillas. Con un tenedor, triturar a hacerse pure. Si fuera necesario se puede agregar un poco del jugo de la pumpkin.
Flavoring the Pureé:
Agregar al pumpking Pureé, los egg yolks, salt, cinammon, ginger nutmeg, brown sugar y lemon zest a mezclar bien. Agregar la crema al final. Mezclar bien.
Pie Crust:
En un recipiente, cernir la harina, agregar la manteca y deshacer con las yemas de los dedos, ya q se siente "arenosa" se le agrega el azucar y los huevos batidos a q se mezclen a la masa. Por Ùltimo agregar la vainilla y poco a poco la leche para q todo se pegue, sin amasar mucho. Dividir la masa en dos y crear dos Crusts para dos moldes de pie.
Dividir también el pumpkin Pureé en dos y vaciar a cada pie crust.
Hornear por 30 min a 180 grados Centigrados.
