Mix cumin, coriander, chili powder, salt & red pepper in small bowl. Rub over beef.
Place ¼ c salsa in crock pot; layer one piece of beef, ¼ c salsa, remaining beef & ½ c
salsa.
Cove; cook on LOW 8-10 hr till meat is tender. Remove meat; save liquid in crock pot.
Trim; discard excess fat from meat. Shred meat w/two forks.
Let cooking liquid stand 5 min for fat to rise. Skim. Blend water & cornstarch till smooth.
Whisk into liquid in cooker.
Cook, uncovered 15 min on HIGH till thickened.
Return beef to cooker; cover.
Cook 15 min till hot.
Corn on cob is good side for this meal.
