This quick great recipe will give you great results for a delicious Hollandaise Sauce in the microwave. You can make this as you're poaching eggs, or finishing the last of a dinner recipe that needs a tasty sauce. It can also be used for steamed veggies very quickly and make yourself look like a super chef!
1. Combine egg yolk, lemon juice, salt and white pepper in a small microwave safe bowl and blend thoroughly.
2. Melt butter in the microwave on High (100%) for 30 to 45 seconds. Add the melted butter in a steady stream to egg yolk mixture, stirring constatnly. When butter has all been added, microwave on High (100%) about 1 more minute, stopping and stirring every 15 seconds. Stop microwaving when sauce becomes thick and smooth, which may be before 1 minute total time.
HINT: If sauce curdles and breaks, you can recover it by heating 1 ounce of milk to boiling and adding it slowly to the Hollandaise while beating vigorously.
