Rally nice
1. Place baking paper on your chopping board. Place chicken on the baking paper and then cover with another sheet of baking paper.
2. Tenderize the chicken with a rolling pin until the desired thickness, remembering that the chicken is already thin at one end.
3. Place 4 plates on the bench. Put flour in first plate.
4. Mix eggs, garlic and parsley and put on 2nd plate.
5. Mix bread crumbs, Parmesan cheese, salt and pepper. Place in 3rd plate.
6. Lightly coat chicken in flour, then egg mixture and then breadcrumbs. Place on 4th plate. Do not starch schnitzels as they tend to stick together.
7. On a medium heat place butter in large pan. Add schnitzels and place a knob of butter on the top of each schnitzel.
8. Cook until both sides are golden brown and chicken is cooked through and serve.
