Makes 1 quart

1. Place cream and chocolate in large heatproof bowl set over a pan of simmering water, making sure water doesn't touch bottom of the bowl
2. Heat just until chocolate melts, stirring occasionally
3. Off heat, whish in cocoa powder, vanilla, cognac/brandy -- set aside
4. In medium saucepan over medium heat, heat milk, sugar and salt until hot but not simmering
5. Separate large bowl, whisk egg yolks and cornstarch
6. Slowly whisk hot milk mixture into egg mixture then pour back in to saucepan
7. Cook over medium-low heat for a few minutes, stirring almost constantly with wooden spoon until mixture thickens like heavy cream -- don't allow to boil!
8. Cook for 30 seconds, scraping bottom of pan with spoon. Mixture should coat spoon and if you run your finger down the back of the spoon it will leave a clear trail
9. Immediately pour mixture through fine-mesh colander into chocolate mixture and stir to combine
10. Cover and chill completely in fridge or over bowl of ice water
11. Mix in the oreos
12. Transfer to container or loaf pan, cover and freeze
