Minestrone Soup
Heat up some olive oil in a pan and add all the chopped vegetables.
Saute for about 15 mins.
Add vegetable broth, canned tomatoes (not drained), thyme and bring it to boil.
Once it is boiled, reduce heat and cover.
After simmering for about 30 mins, add white kidney beans (not drained) and half cup of pasta and cook for about 10 mins.
