Very simple, excellent lunch meal

(1) If using frozen shrimp, thaw under running water, place on lined cookie sheet, sprinkle with olive oil, cook at 350 degrees approximately 12 minutes or until pink. Remove from cookie sheet. After cooling, chop .
(2) Whisk together all the ingredients in a medium bowl. (Reserve half the mayonnaise mixture for dipping sauce (OR JUST MAKE HALF THE MIXTURE )
(3) Stir shrimp and mayonnaise mixture, cover and chill until ready to serve
(4) Trim edges of buns to make flat sides, brush on melted butter, brown each side in hot skillet or griddle
(5) Divide shrimp mixture among buns and slice each in half crossways. Top with chopped celery leaves.
NOTE: 12 shrimp makes enough for two good servings with mixture scaled accordingly (about 1/4th)
