Place sake, soy, miso, and sugar in double boiler and cook for 20 minutes, stirring until sugar is dissolved and mixture is fragrant. Set aside and cool. Place salmon fillets in glass baking dish and generously coat each fillet with miso glaze. Marinate for 24 hours. Remove fillets from marinade, pat dry and bake at 225 for 40 minutes. Pour over glaze and serve or pan sear and pour glaze over to finish. (can also remove fish and add water to deglaze the pan.
