Bring large pot of salted water to boil for pasta. Meanwhile heat grill to mediuma and lightly oil the grates. Season chicken with salt and pepper. Grill until cooked through (2-3 minutes per side). Remove from grill and cut into strips (cut in half if long)
Cook pasta al dente. Reserve 1 cup pasta water, drain pasta and return to pot. Add tomatoes, mozarella, parsely, parmesan and butter. Toss to combine. Add little bits of reserved pasta water to create a sauce that coats the pasta. You many not need the entire cup of pasta water. Serve with additional grated parmesan.
