This soup evolved one Saturday when Mom was trying to figure out what kind of soup to make.
A quick look in the fridge and a trip to the pantry and this soup was created.
Dad and I loved it, and I think that Mom even surprised herself with this one!
Sweat the carrots and celery in a pot with vegetable oil.
Once the vegetables are softened, add 2 cans of beef broth, 1 cup of water, the onion powder, powdered bay leaf and potatoes.
Cook 1/2 hour.
Add can of chili and cook until warmed through. Season with black pepper to taste.
Break up package of Ramen noodles (omitting the seasoning packet) and simmer an additional 5 minutes until the noodles cook through.
Serve.
Simple, quick and tasty.
