Part 1
In a 5-quart pot (or Dutch Oven) combine all Part 1 ingredients. Bring to a boil, reduce heat, and simmer uncovered for 1 1/2 hours. If you are using "Hampeas" then, at this time, add the ham-flavored seasoning packet as well.
Part 2
Add carrots and celery, give a quick stir, and simmer for 1 1/2 to 2 hours or until soup reaches desired consistency.
Remove bay leaf and serve.
