Moosewood refers to the vegetarian Moosewood Collective in Ithaca, New York. Katzen was a member and the cookbook, featuring a collection of the collective’s recipes at the time, was both hand-lettered and illustrated by Katzen herself.
“Moosewood” was listed by the New York Times as one of the top ten bestselling cookbooks of all time, and is arguably the most famous vegetarian cookbook in the world.
It opens with the William Blake quote, “All wholesome food is caught without a net or a trap.” Words after my own animal-loving heart.
I chose the Mushroom-Barley soup for its simplicity and lack of dairy.

1. Cook barley ( in the soup kettle) in 1 1/2 cups of stock until tender (about 1 hr and keep checking to add more stock while it cooks)
2. Sauté onions and garlic in butter
3. When they soften, add mushrooms and salt
4. When all is tender add to barley, being sure to include the liquid the vegetables expresses while cooking
5. Add remaining stock, tamari, and sherry
6. Give it a generous grinding of black pepper
7.Simmer 20 minutes, covered, over the lowest possible heat.
8. Taste to correct seasoning
Optional: Top with Parmesan Cheese
Serve with Crusty Bread. Serve it to guests same day you make it. Otherwise barley soaks up all liquid and is no longer delicate soup. For the second day have more chicken stock to add to soup.
