2. Add onions, vegan cheese (if using), salt and pepper to the egg mixture and mix well.
3. Divide mixture between two mugs.
4. Microwave mugs, one at a time, for about one minute, or until eggs are fully cooked.
5. Serve with salsa or pico de gallo if desired.
