Veggie one pot Moroccan tagine
Heat olive oil in pan with onions and garlic for 5 minutes until soft
Add passata dates cinnamon and cumin and simmer for 10-15 minutes stirring
Add chickpeas, peppers, aubergine and simmer for 20minutes, stirring frequently
Add courgettes and cook 5 more minutes
Season with salt and pepper
Serve others quinoa / couscous
