Cook 1 cup dry farro in a pot of boiling water until just tender; drain well
Stir in butter, lemon juice and salt until butter is melted
Meanwhile, heat 1 T olive oil in a large skillet over medium heat
Add mushrooms and cook, stirring occasionally, until browned and liquid has evaporated, about 6 minutes
Add garlic, and cook, stirring occasionally, until fragrant, about 1 minute
Transfer to the bowl with farro
Reduce heat to medium-low and add remaining 1 T olive oil to skillet
Add sliced fennel bulb and asparagus and cook, stirring occasionally, until just tender, about 6 minutes
Transfer to the bowl with farro
Add green onions and lightly mix
Serve on plates and sprinkle each plate with Parmesan
