Don't be fooled by the name -- this isn't soup! It's a hearty noodle side dish for a holiday meal.
1. Cook the egg noodles according to package directions. Drain them well, and then pour them back into the pot.
2. Add all the remaining ingredients, and mix well. Make sure the margarine is fully melted.
3. Bake covered for 30 minutes at 375.
4. Uncover and bake for 10 more minutes at 350. Serve hot.
This recipe is flexible; my mother-in-law makes it with only 4 ounces of mushrooms and 1 packet of onion soup mix. You can probably get away with using only 3/4 stick of margarine, but if you use less than that, the noodles won't hold together, and some will burn.
