Heat butter or oil in large pot over medium heat, add half the mushrooms and half the shallots (or onion), cook, stir occasionally, 10-12 minutes
Transfer mushrooms to bowl and repeat with remaining butter/oil, mushrooms and shallots
Return all mushrooms to pot, stir in tomato paste, thyme, cumin, coriander, cinnamon and allspice; cook appox 1 minute
Stir in 5 cups of water, S&P, bring to simmer over medium heat, cook gently 20 minutes
Stir in spinach let cook 1-2 minutes
Optional: use an immersion blender, coarsely puree all or some of soup.
Mix in lime juice, serve with dollops of yogurt
