This hearty vegan soup is warm and soothing. Serve over brown rice for a harvest treat!
Brown onion in olive oil.
Add celery and mushrooms and cook until softened and lightly browned.
Add all other ingredients except rice. Bring to a boil, reduce heat and simmer 10-15 minutes.
Serve over brown rice.
Optional: If you want a little meaty flavor, cook one piece of bacon instead of using olive oil.
