Beef meatloaf with a sweet tomato sauce served over rice. My favorite and my kids' favorite right now.
Preheat oven to 325 degrees. In a bowl, mix ground beef, half the chopped onion, two eggs, handful of oatmeal. Mix and form into a loaf in a big casserole dish. Put in the oven
In a sauce pot on the stove, mix the tomato sauce, tomato paste, worcestershire sauce, brown sugar, the rest of the onion and salt and pepper. Sometimes I add ketchup to the sauce because I would see my mom do that, and sometimes I don't. Heat and stir on medium.
Prepare the rice.
After the meat has been in the oven for 1/2 hour or 45 minutes drain the fat and add the sauce to the casserole dish and continue cooking so the total cooking time is around an hour.
Slice with a spatula and serve over the rice with lots of sauce! I hope you enjoy.
