Wonderful Fall soup
Saute garlic and onions in butter, add potatoes, water , 2 cups milk, salt,pepper and parsley. Beat egg, add to 1/2 cup milk, then mix slowly into potato mixture. Bring to a slow boil, then turn down to a simmer. Cook until potatoes are soft, you can mash some to give a more smooth texture.
Make sure to stir often to prevent burning.
