Melt butter, golden syrup and brown sugar in a saucepan large enough to mix all the ingredients. Remove from the heat. Add coconut, dates, walnuts and Weetbix crumbs. Sift flour, baking powder and cocoa into the saucepan. Mix well with a wooden spoon until combined. Press into a greased 20cm square shallow tin. Bake at 180 degrees Celsius for 15 minutes. While still hot, spread with caramel icing. Cool, then cut into squares.
Caramel Icing: Place brown sugar, milk and butter into a saucepan. Heat, stirring until melted then bring to the boil. Beat with a wooden spoon until you feel it just starting to thicken. Use immediately.
