Martha Sue Clymer's Vegetable Soup
1. Cut beef into cubes
2. In Large pot, brown beef in 2 Tbs hot Olive Oil
3. Add canned liquid (juice, diced tomatoes, V-8)
Cook 5-10 min
4. Fill each can you used above with water and add to pot. you can also substitute water for beef stock if you prefer
5. Add all other vegetables and seasonings at this time
6. Stir together and bring to a boil, then turn down to medium-low
7. Cook for an hour or until vegetables are tender.
NOTES:
Season to taste
I usually add a little Tony's and cayenne
Potatoes aren't really good if you decide to freeze soup, so I don't always add potatoes at all
You can add more vegetables or leave out some of the ones listed above.
