Crispy Marinated and Air-Fried Soy Curls
1) Using your hand, squeeze as much excess water out of the rehydrated soy curls.
2) In a bowl, mix together all remaining wet and dry ingredients until homogenous. Add the soy curls to the marinade and mix thoroughly until the soy curls are evenly coated. Allow soy curls to marinate for a minimum of 20 minutes before cooking.
3) Turn the air-fryer on to the 'roast' setting at 325F. Set the cook time to 15 minutes with the basket attachment. Allow the air-fryer to preheat for 1 minutes before evenly spreading the soy curls in the basket, making sure to spread the soy curls apart as best as possible. Cook for 5-6 minutes before shaking the basket and using your hands or tongs to separate the soy curls as they want to stick together. Check the soy curls after any 3-4 minutes, giving them another shake. They should be pretty crispy on the outside yet soft and slightly chewy on the inside. If you would like them crispier, cook for 1-2 minutes longer until desired crispiness. Serve immediately.
