Beat the eggs and season
boil spaghetti in salted boiling water for 10 minutes, until al dente
fry pancetta with garlic cloves whole, in butter until golden brown. The garlic has now imparted its flavour, so remove it.
add cooked pasta to pancetta pan, with a little of the starchy cooking water. keep the pasta cooking water in case you need to add more!
Mix most of the grated cheeses in with the eggs, keeping a small handful back for sprinkling over later.
quickly add the egg/cheese mix to the pasta, working quickly to avoid the eggs scrambling, add more of the pasta cooking water if you feel it is too thick.
serve with more cheese on the top and chopped fresh parsley and a drizzle of olive oil.
