1. Cook the noodles following the package directions, then drain and rinse in cold water. Shake off the excess water in a colander. Put the noodles into a bowl and drizzle with a little toasted sesame oil to stop them from sticking together.
2. Whisk the sesame paste and peanut butter in a bowl (just use a fork), then whisk in the soy sauce, rice vinegar, the 2 tablespoons of sesame oil, sugar, ginger, garlic, and chile-garlic paste. Taste and adjust if you need to. It might seem strong, but it's going on bland noodles.
3. Toss the sauce with the noodles and top with the cucumber, then add the peanuts and herbs.
