These are similar to Luna bars, but a more chocolate twist.
Prepare a cookie sheet by spraying it with Pam and placing wax paper on the bottom with wax paper hanging off both sides. (Ideally if you have 2 identical cookie sheets you can use the second to compress the bars.)
Crush the Coco puffs, the dry roasted peanuts and chop the cranberries in to small pieces.
Combine the puffs, dry roasted peanuts, cranberries and flax meal and Quick Oats all together in a large bowl. Mix very well.
Combine Honey, Brown Sugar and Creamy Peanut Butter in a microwave save bowl. Mix well and microwave for 2 minutes. Stirring every 30 seconds.
Pour the Honey, Peanut Butter mixture in to the dry ingredients. The best way to mix this is with bare hands, making sure it is thoroghly mixed.
Pour the mixed ingredients in to the prepared cookie sheet with the wax paper. Push the mixture in to all the corners. Compress the mixture, if you have another identical cookie sheet, put some wax paper on top of the ingredients then press the second pan down on the first compressing the mixture in the pan.
Place the pan in the refrigerator while you work on the chocolate topping.
Using a double boiler melt the chocolate.
Pull the pan out to the refrigerator and pour the chocolate on the top. Spread it evenly on the top. Place back in the refrigerator for 1/2 hours.
Pull the sheet of bars out of the pan by grabbing the wax paper on the sides and lifting straight up. Cut in to 24 even bars. Wrap individually and place in the refrigerator until you are ready to eat. Enjoy!
