rice cooker short cut for Mexican rice
Puree Rotel and strain the liquid into a measuring cup.
Put the remaining solids in the rice cooker.
Add the rice and butter to the cooker.
Fill the measuring cup with rotel liquid up to 1 1/2 volume with the chicken stock. Place the stock and rotel juice into the rice cooker. Remaining chicken stock is not needed.
Stir well and start the cooker.
When cook is finished fluff and enjoy.
