This is an absolute favorite of mine. It's great when I'm craving fried rice
In a small bowl, combine the soy sauce, mustard, chili paste, and sesame oil. Stir to Mix. Set aside.
Season the chicken with salt and pepper. Set a large non-stick wok or skillet over medium-high heat until hot enough for a spritz of water to sizzle on it. Briefly remove the pan from heat to lightly mist with olive oil spray,
Scatter the chicken into the pan and cook, stiring occassionally until browned on the outside and fully cooked on the inside.Transfer cooked chicken to a bowl and cover to keep warn.
Off heat, lightly mist the pan with olive oil spray. Set pan back on medium-high heat and add onion, carrots, and garlic.Cook stirring frequently for 2-3 minutes. Add the riced cauliflower and peas. Cook and addtional 2-3 minutes or until the mixture is hot..
Create a well in the rice and veggie mixture to expose the center of the pan. Add egg whites to the pan and remove from heat. Use a spatula to scape the egg whites from the bottom of the pan as they cook, mixing them into the rice mixture until fully cooked.
Keeping the pan off heat, add the chicken back into the mixture and stir in the reserved soy sauce mixture. Stir about 1 minute until well combined.
This is a pretty spicy dish. To make it more mild but still get the asian flavor, leave out the hot mustard and chili paste
