It is a very easy and quick recipe for those who do not practice in the kitchen and do not have time.
Cut tomato, red pepper, and onion into small to medium size pieces. Crack eggs into a bowl and whisk lightly. Add diced tomato, peppers, onion and spinach leaves. Heat butter in a frying pan over medium heat. Pour egg mixture into hot pan and salt to taste.
Let cook until cooked through without stirring (may need to turn heat down so the bottom does not burn before it is cooked through.) When cooked through flip one side over the other and serve.
