This is one of "those" recipes... You can make it almost any way you like. It is kid-friendly, quick, and won't break the bank. Plus it's one pan. If you are raising a family on a budget, you need recipes like this on hand!
Cut chicken into bite size pieces. Sprinkle chicken with salt, pepper, and garlic powder. Heat butter in pan over medium heat. Add chicken and saute until chicken starts to brown. Add sliced fresh mushrooms, if using, and saute until mushrooms start to brown and chicken is cooked through. Remove all from pan and set aside. Deglaze pan by adding the chicken stock to the hot pan. Add rice and frozen chopped broccoli. Cover, bring to a boil, reduce heat, and simmer, breaking up frozen veggies from time to time, about 20 minutes or until rice is cooked. Add back the chicken and mushrooms, stir, heat through. Turn off heat and sprinkle with shredded cheese, cover until cheese is melted, then serve.
You can also add diced onion with the mushrooms or fresh garlic, or add green onions with the melted cheese. You can make it with bouillon but I prefer a good quality chicken stock.
