Good use for leftover chicken

In a Dutch oven or pot, heat oil over medium heat. When hot, add onion, celery, carrot, salt, pepper and cayenne. Cook, stirring until the veggies are tender, about 6 minutes.
Add in the pasta, chicken broth, milk, thyme, paprika, garlic powder, and sage and stir to combine. Bring to a boil. Once boiling, reduce the heat to simmer and cook, uncovered, stirring occasionally, until the pasta is tender and cooked through, about 12 minutes.
Stir in frozen peas, diced chicken, parsley, and lemon, remove from heat, and cover. Let stand until peas are just cooked through, about 5 minutes. Taste and add additional seasonings, if desired.d Also, if you want your sauce a little thinner, add 1/4 cup chicken broth to thin it out.
