1. Mince 1.5 tbsp of jalapeno, thinly slice the rest, removing seeds and ribs. Remove sausage from casing. Drain corn.
2. Add drizzle of oil over medium-high heat. Add sausage, garlic powder and minced jalapeno. Cook until meat browned, 4-6 minutes.
3. Add corn and blackening spice to pot. Cook until corn is lightly browned, 2-3 minutes.
4. In a small bowl, combine sliced jalapeno, lime juice and 1.5 tsp sugar (for 4 servings). Microwave for 1 minute. Set aside, stirring occasionally.
5. Stir tomato paste into pot for 30 seconds. Sir in beans with liquid and .25 cup Chicken stock. Bring to boil over high heat, then 30 seconds more. Turn off heat. Add 3 tsp salt and pepper to taste (for 4 servings). Add squeeze of lime juice. Add water if too thick.
6. Serve, topping with sour cream and pickled jalapenos (after draining liquid).
