Heat oil over medium heat. Sauté onions and garlic until very soft and caramelized. Stir in spices. Remove from heat and stir in lime juice. Place two tortillas on baking sheet. Spread mixture equally on the two tortillas and sprinkle with cheese. Top with remaining tortillas and bake at 400° for about 8 minutes until edges are golden. Let stand out of oven for about 5 minutes. Cut into sixth with a pizza cutter. Serve with sour cream, guacamole, salsa, and cilantro.
