Preheat the broiler and set rack 6" from the heat. Line a baking sheet with parchment paper and spread the tomatoes and poblanos on the sheet. Broil 4-5 minutes, turning the tomatoes once, until softened and charred in spots. Transfer the tomatoes to a work surface. Broil the poblanos for another 5-7 minutes longer,but ending occasionally until charred all over.
Let the poblanos and tomatoes cool then coarsely chop the tomatoes; peel, seed and stem the chiles. Then slice the chilies thinly and crosswise.
Leave the broiler on. Preheat a cast iron skillet. Brush the tortillas with olive oil and toast on the skillet, turning once, until browned in spots and crisp, 4 minutes.
In a large bowl, toss together the manchego, mozzarella, and Monterey Jack cheese. Arrange two tortillas on another baking sheet lined with aluminum foil. And two more tortillas on another foil lined baking sheet. Sprinkle the tortillas with the cheese. Scatter the chiles and tomatoes over the cheese. Top each tortilla with 2 tablespoons oregano and a sprinkle of salt.
Broil the quesadillas one sheet at a time until cheese is melted. Transfer to a work surface and cut into triangles.
