Orecchiette means little ears in Italian. It's a thick rustic pasta. The dough is cut into little pieces and you just use your thumb to press a curve into the center. The thumbprint perfectly holds the sauce and the pasta.
Making orecchiette is a different recipe. This week we're sending out a recipe for our favorite sauce to go with this pasta. We like to make a simple sauce to go with orechiette. And then just for fun we scoop fresh ricotta right on top of the pasta as we eat them.
Start the pasta
In a pot heat the chicken stock on high until it boils. When the stock comes to a full boil add the pasta. Orrechiete take along time to cook, 25 to 30 minutes. Remember to stir the Orecchiette every few minutes so they don't stick to pot.
Make the sauce
In a deep frying pan on medium heat sauté the onions & garlic in the oil with the salt, pepper and ? of the basil. When the onions are soft add the tomatoes. Gently break up the tomatoes with a wooden spoon while they are cooking. Cook the sauce on medium until it starts to boil. Let the sauce boil for 7 minutes. Take a ½ cup of the boiling stock out of the pot with the pasta. Put the stock into the sauce and simmer them together for one minute. Turn off the heat and wait for the pasta to finish cooking.
Mix and serve
Drain the pasta. Put the pasta and the sauce into your serving dish and fold them together.
On each plate add two spoonfuls of ricotta, a sprinkle of Pecorino cheese and a few pieces of the chopped basil.
