Suggest a better descriptionDrain the salmon, reserving 3/4 C of the liquid. Remove skin, dark meat, and bones. Flake the meat. Melt butter in large skillet over medium-high heat. Add onion and cook till tender. In a medium bowl, combine onions with reserved liquid, 1/3 of the cracker crumbs, eggs, parsley, mustard, and salmon. Mix until blended, then shape into six patties. Coat patties in cracker crumbs. Cook patties in a large skillet over medium heat until brown, then carefully turn and brown on other side. Serve with lemon sauce (See lemon sauce recipe).
