Ribs are a barbecue staple, but you don't need a lot of fancy equipment (or even a grill) to get tender, flavorful, bone-sucking good ribs. Pair that with a killer sauce and a spicy-sweet dry rub... You'll need to make extra.
1. Preheat the oven to 300 degrees Fahrenheit. Line a rimmed baking sheet with aluminum foil.
2. In a small bowl, mix together the ingredients for the dry rub: 1 teaspoon salt, 1 teaspoon ground black pepper, 2 tablespoons chili powder, 2 tablespoons brown sugar, 2 teaspoons garlic powder, 1 teaspoon onion powder, and ¼ teaspoon cayenne pepper. Rub this spice blend on both sides of the ribs and arrange the ribs on the foil-lined baking sheet.
3. Cover the ribs with foil and bake for 1 hour and 30 minutes.
4. While the ribs are baking, prepare the blackberry-bourbon sauce. Combine ketchup, blackberries, bourbon, brown sugar, apple cider vinegar, ground mustard, salt, ground black pepper, garlic powder, and cayenne in a medium saucepan set over medium heat. Cook until the mixture begins to bubble, then reduce the heat to medium-low and simmer until blackberries burst and release their juices and mixture begins to thicken, about 15 minutes. For an ultra smooth sauce, strain it through a fine mesh strainer to remove blackberry seeds after pureeing.
5. After 1 hour and 30 minutes, take the ribs out of the oven and remove the top piece of foil. Brush the ribs all over with the blackberry-bourbon sauce. Return the ribs to the oven and cook, uncovered, for 30 minutes more. If you’d like your ribs to have a crunchy, caramelized outer texture, broil them for 2 to 3 minutes before serving.
6. Let the ribs rest for 10 minutes before slicing into individual ribs. Serve with any remaining sauce.
