Gribiche is classically paired with seafood, vegetables, and game meats, but can also be used as a spread for sandwiches and wraps or as a dip for crudites.
To make the sauce, for perfect hard-boiled eggs, bring a saucepan off water to a boil over high heat. Add the cold eggs and cook for 10 minutes. Shock in ice water and chill for 15 min. Set aside.
Place the mustard, vinegar and olive oil in a blender. Pulse until emulsified. Fold in the cornichons, capers and eggs, and pulse until combined but still chunky and uneven. Transfer to a small bowl and stir in the parsley. Season to taste with salt & black pepper.
To make the fish, preheat the oven to 450. Pat the fish fillets dry with a paper towel and place the fish in a baking dish sprayed with oil. Drizzle with the olive oil and season with the salt, pepper & paprika. Top each fillet with a thyme sprig.
Bake about 12-14 min. Drizzle the sauce on each fillet (or plate the fillets on a bed of sauce) and serve.
