Having a few great pantry items will make your everyday cooking streamlined. This rub recipe can be used for pork or chicken, or even game meats if you have them. It is slightly sweet which brings out the sweetness in meats. Store in a leftover glass jar and store at room temperature or store in a plastic container and toss in the freezer. Take care to use a spoon to sprinkle rub over meat, THEN rub onto meat. You don't want raw meat juices ending up in your rub

1, Heat oven to 375 Degree F
2. Cut about 36 inches of aluminum foil to wrap ribs.
3. Place onion of the surface of the aluminum foil
4. Top with ribs, sprinkle about 2 tablespoons RIB RUB on the surface of the ribs, rub onto the surface
5. Flip ribs and sprinkle with more rub.
6. Wrap ribs like a Christmas package, folding edges and creating a tight seal
7. Place in oven for 30 minutes.
8. Toss potatoes in vegetable oil to coat evenly
9. Reduce heat to 325 degrees, open foil package creating a "dish" to hold sweet potatoes. Place sweet potatoes under the ribs with the onions.
10 Return to oven and bake 25 or until potatoes are tender
Cut ribs into 2-3 pieces per portion. Serve with BBQ sauce and sweet potatoes
Keeping the ribs tightly wrapped speeds the cook time, the rub creates very tender and moist ribs. but still dry enough to cut into portions. If you baste the ribs with sauce before you wrap the ribs will be more saucy. You get to decide which rib is the best for you.
