Place the sesame oil, fish sauce, soy, water and sugar in a saucepan, place over a
medium heat and simmer.
Add the ginger, chilli, garlic and coriander roots and continue to simmer and reduce.
Add lime juice.
Cover a serving plate with rock salt, place the oysters in shells on the plate, spoon
the dressing onto each oyster, top with crispy shallots to serve, with a lime wedge to
