Split the vanilla bean in half lengthwise, and across so you have four pieces. Scrape the seeds from the vanilla bean and mix with the sugar. Sprinkle vanilla bean seeds and sugar mixture over the pears, place two pieces of orange zest, shiny side d own over pear halves and top with the actual bean. 4. Fold at the top of the heart and make a series of tight overlapping folds to seal the package all the way around. Place on a baking sheet and bake for 12 min. at 400 degrees F.
