Big meatballs usually have to be browned in batches, & they often sag under their own weight. We solve those problems & show you how to make marinara at the same time.
The meatballs & sauce use the same onion mixture. Sausage adds extra seasoning to the meatballs; use hot sausage instead of mild if you like.
This recipe makes enough to sauce 2 lbs. of pasta. (Recipe in Cook's Ill. recipe binder)
Onion Mixture:
1: heat oil in a Dutch oven over Med-High heat until shimmering. ADD onions and cook until golden brown, 10-15 mins. ADD garlic, oregano, & pepper flakes & cook until fragrant, about 30 seconds. Transfer half o onion mixture to large bowl & set aside.
Marinara Sauce:
2) ADD tomato paste to onion mixture remaning in pot & cook until fragrant, about 1 min. ADD wine & cook until slightly thickened, about 2 mins. STIR in tomatoes & water & simmer over Low-Heat until sauce has thickened; 45-60 mins. STIR in Parmesan & basil. Season with salt & sugar to taste.
Meatballs:
3) Meanwhile, adjust oven rack to Upper-Middle position & heat oven to 475*. MASH bread & milk together in bowl with reserved onion mixture until thoroughly combine. ADD sausage, Parmesan cheese, parsley, eggs, garlic, and salt, and MASH to combine. ADD beef and gently knead with hands until combined (Do Not Overwork). Form mixture into 16 (1/2") meatballs, place on pinned baking sheet, and BAKE until well-browned, about 20 mins.
4) Transfer meatballs to pot with thickened sauce and SIMMER for 15 mins. Serve over pasta.
Meatballs and marinara sauce can be frozen for up to 1 month.
