I have tried several variations of this recipe and this is my favorite so far. You can adapt it to your taste. Most recipes include green olives (my kids won't eat them this way) or tomato sauce; however, I have never had them that way. My fiancé taught me to make with mozzarella, but so far the Kraft blend with cream cheese has been the most popular in my house. You can also replace beef with shredded chicken or bake rather than fry.
Defrost discos.
PREPARE
Brown ground beef & drain. Add sofrito, sazón, garlic powder, & pepper. Add adobo to taste.
On low heat, add cheese to taste. Once melted and well incorporated, remove from heat.
ASSEMBLE
Scoop a heaping Tbs of beef filling in each disco, fold in half, and firmly seal both sides with fork. Assemble one at a time, setting aside until ready to fry.
COOK
Fill frying pan with corn oil, so that the bottom half of pastelillos will be submerged. Heat over medium-high heat (350 degrees). Fry pastelillos in batches, about 1-2 minutes on each side, flipping once. When golden brown, place on paper towel to drain.
