Combine flour, salt, sugar. Cut in butter. Add cold water.
Shape into flat disk, wrap, rest for an hour. Preheat oven, 425,
Roll out half of dough. Line baking dish, trim.
Mix the sugar, flour, salt, nutmeg. Toss with peaches.
Fill pastry-lined dish with peaches. Dot butter over peaches.
Roll out second half of dough, cover top of cobbler. Cut 1" slits in top of dough. Sprinkle top with sugar and butter.
Bake 20 mins. Reduce heat to 375, cook 30 mins.
Cool on rack, serve with whipped cream.
