Crumbly, soft peanut butter cookies that will satisfy any peanut butter cravings. Great for cold days.
Preheat oven to 350 F.
Combine flour, baking soda, and salt in a bowl; stir.
Cream butter, peanut butter, and sugars together until light and fluffy (about 1 minute). Add vanilla and egg, stir to combine.
Add oats and stir only to combine.
Scoop onto parchment-lined baking tray. Bake for 9 minutes or until edges of cookies are golden brown and middles are set.
